Commercial Kitchens

St Augustine’s College has three commercial catering facilities. These are used to teach students who are completing school-based apprenticeships in hospitality and traineeships in kitchen operations as well as those studying food technology and other catering subjects.

The Lavalla café and training kitchen and Tolle's commercial kitchen have been uniquely designed to incorporate a full complement of commercial cooking and catering equipment. Such spaces allow students to hone their skills in situations akin to hospitality requirements in the real world. 

Students undertaking hospitality courses plan, prep and cook for and wait on a variety of college events.  They provide full food and beverage services such as morning teas, evening functions for parents, special events such as Champagnat Day dinners and year level “informals”.  They cater for musical events and academic award evenings, and the Year 12 graduation dinner for 400 guests. Hospitality students also gain work experience in Tolle's commercial kitchen preparing meals for the boarding community under the watchful eye of the College chef and the professional kitchen brigade.
